Warm the milk and cream with the sage leaves over medium-low heat until steaming (do not boil). Remove from heat, cover, and steep for 15 minutes. Strain out the sage, then whisk in the sugar, honey, vanilla, and blackberry puree. Cool completely.

Sage is earthy and can easily overpower fruit — keep the infusion to exactly 15 minutes and pull the leaves out.
